What is the fermentation process?
Our beans undergo a strict 5-6 day box fermentation process with regular turning. This develops the precursor compounds necessary for complex chocolate flavor. We verify fermentation levels using a cut-test for every batch.
What are the flavor profiles?
Bali beans are known for their bright, fruity acidity and floral notes. Sulawesi beans tend to be more earthy and nutty with a robust chocolate base. We can provide sample lots for flavor testing.
How do you ensure bean purity?
Beans are sun-dried on raised platforms to avoid ground contamination. They are then machine-cleaned and hand-sorted to remove flat, broken, or moldy beans before bagging.
What is the minimum order quantity?
The standard MOQ for bulk fermented beans is 1,000 kg (1 metric ton). For nibs or mass, the minimum is 500 kg.
